This Magic Lemon Cobbler creates its own layers as it bakesโsweet, gooey lemon filling on the bottom with a fluffy, golden cobbler top. No stirring needed after it goes in the oven! Itโs the perfect easy dessert for lemon lovers, with just the right balance of tart and sweet.
Ingredients
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 cup lemon pie filling or lemon curd
Instructions

Preheat oven to 350ยฐF (175ยฐC).

Place the butter in a 9×9-inch baking dish and melt it in the oven.

In a bowl, whisk together flour, sugar, baking powder, and salt.

Stir in milk, lemon zest, and lemon juice until just combined (donโt overmix).

Carefully pour the batter over the melted butter in the baking dishโdo not stir.

Spoon the lemon pie filling or lemon curd over the top of the batter. Again, do not stirโthis is what makes the magic happen!
