Description

Maine Potato Candy is a traditional no-bake sweet treat made with mashed potatoes, powdered sugar, and peanut butter. Despite its unusual main ingredient, it has a rich, fudge-like texture and sweet, nutty flavor.

Ingredients

Units Scale
  • 1/2 cup mashed potatoes (plain, no seasoning)
  • 45 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup peanut butter (creamy or crunchy)

Instructions

  1. In a large mixing bowl, combine mashed potatoes and vanilla extract.
  2. Gradually mix in powdered sugar, one cup at a time, until a stiff dough forms (it should no longer be sticky).
  3. Roll the dough out between two sheets of wax paper into a rectangle about 1/4-inch thick.
  4. Spread peanut butter evenly over the surface of the dough.
  5. Carefully roll the dough up jelly-roll style into a log, peeling away the wax paper as you go.
  6. Wrap the log in wax paper or plastic wrap and refrigerate for at least 1 hour to firm up.
  7. Slice into 1/4-inch thick pieces and serve chilled.

Notes

  • Make sure the mashed potatoes are completely cooled before using.
  • Store in an airtight container in the fridge for up to 1 week.
  • You can use almond or sunflower butter as a peanut-free alternative.
  • If the dough is too sticky, add more powdered sugar gradually until workable.
