- 1 cup heavy cream
- 1/2 cup pure maple syrup
- 1/4 cup unsalted butter

Instructions
- Prepare the pan:ย Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Cook the mixture:ย In a medium saucepan, combine the sugar, heavy cream, maple syrup, and butter. Cook over medium heat, stirring constantly, until the butter melts and the sugar dissolves.
- Boil to soft-ball stage:ย Attach a candy thermometer to the pan and bring the mixture to a boil. Cook without stirring until the thermometer reads 238ยฐF (soft-ball stage). This takes about 10โ15 minutes.
- Cool the fudge base:ย Remove the saucepan from heat and let the mixture cool to 110ยฐF. Do not stir during this time.
- Beat and add walnuts:ย Once cooled, add the vanilla extract and salt. Beat the mixture with a wooden spoon until it thickens and loses its glossy texture. Fold in the toasted walnuts.
- Set the fudge:ย Pour the mixture into the prepared pan, spreading it evenly. Let it sit at room temperature for 2โ3 hours or until firm.
- Cut and serve:ย Lift the fudge out of the pan using the parchment paper, and cut it into squares. Store in an airtight container.
