Instructions

  1. Prepare the pan:ย Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Cook the mixture:ย In a medium saucepan, combine the sugar, heavy cream, maple syrup, and butter. Cook over medium heat, stirring constantly, until the butter melts and the sugar dissolves.
  3. Boil to soft-ball stage:ย Attach a candy thermometer to the pan and bring the mixture to a boil. Cook without stirring until the thermometer reads 238ยฐF (soft-ball stage). This takes about 10โ€“15 minutes.
  4. Cool the fudge base:ย Remove the saucepan from heat and let the mixture cool to 110ยฐF. Do not stir during this time.
  5. Beat and add walnuts:ย Once cooled, add the vanilla extract and salt. Beat the mixture with a wooden spoon until it thickens and loses its glossy texture. Fold in the toasted walnuts.
  6. Set the fudge:ย Pour the mixture into the prepared pan, spreading it evenly. Let it sit at room temperature for 2โ€“3 hours or until firm.
