- Season and Sear the Chicken: Generously season both sides of the chicken breasts with salt, black pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5 minutes on each side, until golden brown. Remove the chicken from the pan and set aside.
- Prepare the Sauce Base: In the same skillet, add the minced garlic and cook for about 30 seconds, until fragrant. Pour in the chicken broth to deglaze the pan, scraping up any browned bits stuck to the bottom for extra flavor.
- Make It Creamy: Lower the heat to medium. Add heavy cream, Parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth. Taste and adjust salt and pepper as needed.
- Finish Cooking the Chicken: Return the seared chicken breasts and any accumulated juices back to the skillet. Spoon some sauce over the chicken. Simmer uncovered for 8โ12 minutes, or until the chicken is cooked through and the sauce has thickened.
