- 2 tablespoons chives (finely chopped, optional)

- 12–14 slices bacon (thin-cut works best)

Instructions
- Prepare the Mashed Potatoes
In a mixing bowl, combine the mashed potatoes, butter, milk, and garlic powder. Season with salt and pepper. Mix until smooth and creamy, then let the mixture cool if it’s still warm. - Shape the Potato Bombs
Scoop about 2 tablespoons of mashed potato and flatten it in your palm. Place a cube of cheddar cheese and a pinch of chives (if using) in the center. Gently fold the potato mixture around the cheese to completely seal and roll into a smooth ball. - Wrap with Bacon
Take a slice of bacon and stretch it slightly. Wrap it around the potato ball, securing the ends underneath. If needed, use a toothpick to hold the bacon in place. - Bake the Bacon Bombs
Arrange the wrapped bombs on a wire rack set over a baking sheet (to catch drips). Bake in a preheated oven at 400°F (200°C) for 20-25 minutes or until the bacon is crisp and the cheese is melted. - Garnish and Serve
Let the bombs cool slightly, remove toothpicks if used, and garnish with chopped parsley. Serve warm for the best gooey cheese pull!
