Instructions

  1. Prepare the Mashed Potatoes
    In a mixing bowl, combine the mashed potatoes, butter, milk, and garlic powder. Season with salt and pepper. Mix until smooth and creamy, then let the mixture cool if it’s still warm.
  2. Shape the Potato Bombs
    Scoop about 2 tablespoons of mashed potato and flatten it in your palm. Place a cube of cheddar cheese and a pinch of chives (if using) in the center. Gently fold the potato mixture around the cheese to completely seal and roll into a smooth ball.
  3. Wrap with Bacon
    Take a slice of bacon and stretch it slightly. Wrap it around the potato ball, securing the ends underneath. If needed, use a toothpick to hold the bacon in place.
