For the Chicken Meatballs:
- 1 lb ground chicken
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour (or breadcrumbs)
- 1 large egg
- 4 cloves garlic, minced
- 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for cooking)
For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
- Salt and pepper, to taste
For the Cauliflower Rice:
- 4 cups riced cauliflower (fresh or frozen)
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- Prepare the Meatballs:
In a large bowl, combine ground chicken, Parmesan, almond flour, egg, garlic, parsley, onion powder, paprika, salt, and pepper. Mix until just combined.
Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. - Cook the Meatballs:
Heat olive oil in a large skillet over medium heat. Add the meatballs in batches (donโt overcrowd the pan) and cook for 4-5 minutes on each side, until browned and cooked through. Remove from the skillet and set aside. - Make the Garlic Butter Sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute. Stir in lemon juice and parsley.
Return the meatballs to the skillet and toss to coat them evenly in the garlic butter sauce. - Prepare the Cauliflower Rice:
In another pan, heat olive oil over medium heat. Add minced garlic and sautรฉ for 30 seconds. Add the riced cauliflower, season with salt and pepper, and cook for 4-5 minutes, stirring occasionally, until tender. - Assemble for Meal Prep:
Divide the cauliflower rice evenly into 4 meal prep containers. Top with the garlic butter chicken meatballs. Garnish with extra parsley if desired.
Notes
- You can substitute ground turkey for chicken if preferred.
- Add a squeeze of fresh lemon before serving for extra brightness.
- For added veggies, mix in sautรฉed spinach or bell peppers with the cauliflower rice.
