For the Chicken Meatballs:

  • 1 lb ground chicken
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour (or breadcrumbs)
  • 1 large egg
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Garlic Butter Sauce:

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste

For the Cauliflower Rice:

  • 4 cups riced cauliflower (fresh or frozen)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatballs:
    In a large bowl, combine ground chicken, Parmesan, almond flour, egg, garlic, parsley, onion powder, paprika, salt, and pepper. Mix until just combined.
    Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  2. Cook the Meatballs:
    Heat olive oil in a large skillet over medium heat. Add the meatballs in batches (donโ€™t overcrowd the pan) and cook for 4-5 minutes on each side, until browned and cooked through. Remove from the skillet and set aside.
  3. Make the Garlic Butter Sauce:
    In the same skillet, melt the butter over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute. Stir in lemon juice and parsley.
    Return the meatballs to the skillet and toss to coat them evenly in the garlic butter sauce.
  4. Prepare the Cauliflower Rice:
    In another pan, heat olive oil over medium heat. Add minced garlic and sautรฉ for 30 seconds. Add the riced cauliflower, season with salt and pepper, and cook for 4-5 minutes, stirring occasionally, until tender.
  5. Assemble for Meal Prep:
    Divide the cauliflower rice evenly into 4 meal prep containers. Top with the garlic butter chicken meatballs. Garnish with extra parsley if desired.
