- 1 lb ground beef
- 1 large egg
- 1 Tbsp mustard
- 1/4 cup BBQ sauce (plus extra for topping)
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/8 cup minced onion
- 1/2 cup bread crumbs
- 4 slices pepper jack cheese
- 4 slices bread
- Butter (for spreading on bread)
Instructions
- Preheat oven to 375ยฐF.
- In a bowl, mix beef, egg, mustard, BBQ sauce, garlic powder, pepper, and onion. Stir in bread crumbs until well combined.
- Shape mixture into an oval loaf, place in 4ร8 pan, top with extra BBQ sauce, and cover with foil.
- Bake for 45 minutes or until meatloaf reaches 160ยฐF. Remove, rest 20 minutes, then slice into 3/4โinch thick pieces.
- Butter one side of each bread slice. On a skillet over medium heat, place bread butteredโside down, add slice of cheese, then meatloaf slice(s), then another cheese slice, and top with remaining bread (buttered side up).
- Cook until bread is golden-brown, flip, cook until cheese melts and other side is toasted. Serve hot.
Notes
- Perfect way to use leftover meatloaf.
- Try different cheeses like Muenster or Swiss.
- You can mix shredded cheese or veggies into the meatloaf for extra flavor.
- Grill on Texas toast-style or sourdough for a crispier bite.
