Description

A comforting twist on classic grilled cheese featuring a savory meatloaf slice and melty pepper jack cheese between buttery toasted bread.


Ingredients

  • 1 lb ground beef
  • 1 large egg
  • 1 Tbsp mustard
  • 1/4 cup BBQ sauce (plus extra for topping)
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/8 cup minced onion
  • 1/2 cup bread crumbs
  • 4 slices pepper jack cheese
  • 4 slices bread
  • Butter (for spreading on bread)

Instructions

  1. Preheat oven to 375ยฐF.
  2. In a bowl, mix beef, egg, mustard, BBQ sauce, garlic powder, pepper, and onion. Stir in bread crumbs until well combined.
  3. Shape mixture into an oval loaf, place in 4ร—8 pan, top with extra BBQ sauce, and cover with foil.
  4. Bake for 45 minutes or until meatloaf reaches 160ยฐF. Remove, rest 20 minutes, then slice into 3/4โ€‘inch thick pieces.
  5. Butter one side of each bread slice. On a skillet over medium heat, place bread butteredโ€‘side down, add slice of cheese, then meatloaf slice(s), then another cheese slice, and top with remaining bread (buttered side up).
  6. Cook until bread is golden-brown, flip, cook until cheese melts and other side is toasted. Serve hot.
