Description

Ingredients

  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar (or 1/2 teaspoon lemon juice)
  • Pinch of salt

  • 1/2 teaspoon almond extract or other flavoring
  • Food coloring (a few drops)

Instructions

  1. Preheat the ovenย to 225ยฐF (110ยฐC) and line two baking sheets with parchment paper.
  2. Whip the egg whitesย in a clean, dry mixing bowl on medium speed until foamy.
  3. Add cream of tartar and salt,ย then increase the speed to medium-high and continue beating.
  4. Slowly add sugar,ย one tablespoon at a time, beating until stiff peaks form and the mixture is glossy. This can take 5โ€“7 minutes.
  5. Mix in vanilla extractย (and any optional flavors or coloring) on low speed until just combined.
  6. Pipe or spoon the meringueย onto the prepared baking sheets, making small swirls or dollops.
  7. Bake for 1.5 to 2 hours,ย until the meringues are dry to the touch and easily lift off the parchment.
  8. Turn off the ovenย and let the cookies cool inside for another hour to prevent cracking.
