Description

Mexican Pinwheels are a quick and flavorful appetizer perfect for parties, potlucks, or a fun snack. These colorful, bite-sized rolls are packed with creamy, zesty flavors from cream cheese, salsa, and a mix of Mexican-inspired spices, wrapped in soft tortillas.


Ingredients

  • 4 large flour tortillas (10-inch size)
  • 8 oz (1 package) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup chunky salsa, drained
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced black olives (optional)
  • 1/4 cup chopped green onions
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix the softened cream cheese and sour cream until smooth.
  2. Add the salsa, shredded cheese, bell peppers, black olives, green onions, chili powder, cumin, garlic powder, salt, and pepper. Stir until well combined.
  3. Lay a tortilla flat on a clean surface. Spread a thin, even layer of the mixture over the entire tortilla, leaving a small border around the edges.
  4. Roll the tortilla tightly from one end to the other, like a jelly roll.
  5. Wrap the rolled tortilla in plastic wrap and refrigerate for at least 1 hour to set.
  6. After chilling, remove the plastic wrap and slice the roll into 1-inch pinwheels.
  7. Arrange on a platter and serve chilled.

  • For a spicier kick, add diced jalapeรฑos or a dash of hot sauce to the filling.
  • Use whole wheat or spinach tortillas for added color and flavor.
