Description

Mexican Street Corn, also known as Elote, is a popular street food made with grilled corn on the cob slathered in a creamy, tangy, and spicy sauce topped with cheese and cilantro.


Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Salt to taste
  • Extra lime wedges for serving

Instructions

  1. Preheat a grill to medium-high heat.
  2. Grill the corn, turning occasionally, until charred and cooked through, about 10 minutes.
  3. In a small bowl, mix together mayonnaise, sour cream, garlic, lime juice, chili powder, and a pinch of salt.
  4. Once the corn is grilled, brush or spoon the sauce mixture evenly over each ear.
  5. Sprinkle crumbled cotija cheese over the sauced corn.
  6. Garnish with chopped cilantro and extra chili powder if desired.
  7. Serve immediately with lime wedges on the side.

Notes

  • If cotija cheese is unavailable, feta cheese can be used as a substitute.
  • You can also use frozen corn on the cob if fresh is not availableโ€”just thaw and grill.
  • Adjust chili powder to your spice preference.
