Description

These mini pancake sausage bites are the perfect handheld breakfast or snack! Fluffy mini pancakes are wrapped around savory sausage links, creating a sweet and savory treat thatโ€™s fun to eat and easy to make. Perfect for brunch, parties, or on-the-go mornings!

Ingredients

For the Pancakes:

  • 1 cup (125g) all-purpose flour

  • 1 tablespoon granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup (180ml) buttermilk (or substitute with 3/4 cup milk + 1 teaspoon lemon juice)

  • 1 large egg

  • 1 tablespoon unsalted butter, melted

  • 1/2 teaspoon vanilla extract

For the Sausage Bites:

  • 12 mini sausage links (fully cooked)

  • Maple syrup (for dipping)

Instructions

  1. Prepare the Pancake Batter:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.

  2. Cook the Sausage Links:
If using raw sausage links, cook them according to package instructions until fully cooked. Let them cool slightly.

  3. Make the Mini Pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour 1 tablespoon of batter onto the skillet for each mini pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

  4. Assemble the Bites:
Wrap each mini pancake around a sausage link, securing it with a toothpick if needed.

  5. Serve:
Serve warm with maple syrup for dipping.

Notes

  • Use pre-cooked sausage links for a quicker option.

  • Add a pinch of cinnamon or nutmeg to the pancake batter for extra flavor.

  • Store leftovers in the fridge for up to 3 days. Reheat in the oven or microwave before serving.

  • For a fun twist, drizzle with chocolate sauce or sprinkle with powdered sugar.
