- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 3/4 cups unsweetened almond milk
- 1/4 cup maple syrup
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla extract
- 1 1/2 cups mixed berries (fresh or frozen)
- 1/4 cup chopped nuts or seeds (optional topping)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- In a large bowl, mix together oats, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk together almond milk, maple syrup, chia seeds (if using), and vanilla extract.
- Pour the wet ingredients into the dry and stir until combined.
- Fold in the mixed berries gently.
- Pour the mixture into the prepared baking dish and spread evenly. Top with nuts or seeds if desired.
- Bake for 35–40 minutes, or until the top is golden and the center is set.
- Let cool for a few minutes before slicing and serving.
Notes
- Store leftovers in the fridge for up to 5 days or freeze in portions for a quick breakfast.
