For the Muffins:

- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light brown sugar
- 2 large eggs, room temperature
- 1/2 cup (120ml) milk (or buttermilk)
- 1 tsp vanilla extract
- 1 1/2 cups (200g) peeled and diced apples (Granny Smith or Honeycrisp work well)
For the Crumb Topping:
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) light brown sugar
- 1 tsp ground cinnamon
- 1/4 cup (60g) unsalted butter, melted
For the Glaze (Optional):
- 1/2 cup (60g) powdered sugar
- 2โ3 tsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or grease with nonstick spray.
- Make the Crumb Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Pour in melted butter and mix with a fork until crumbly. Set aside.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Mix Wet Ingredients: In a large bowl, whisk together oil, granulated sugar, and brown sugar until smooth. Add eggs, milk, and vanilla extract, mixing until well combined.
- Combine and Add Apples: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in diced apples.
- Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling them about ยพ full.
- Add Crumb Topping: Sprinkle the crumb topping generously over each muffin.
- Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Glaze: Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. If desired, drizzle with glaze before serving.
