- 1/2 cup mini M&M’s
Instructions
- In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until the mixture is smooth and well blended.
- Add the rolled oats and ground flaxseed (if using) to the bowl. Mix thoroughly until all the ingredients are well incorporated.
- Fold in the mini chocolate chips and mini M&M’s, ensuring they are evenly distributed throughout the mixture.
- Using a cookie scoop or your hands, portion out the mixture and roll it into 1-inch balls. Place the formed balls onto a baking sheet lined with parchment paper.
- Refrigerate the energy bites for at least 30 minutes to allow them to firm up.
- Once set, transfer the energy bites to an airtight container. Store them in the refrigerator for up to one week or freeze them for up to two months.
