Description

Monster Cookie Energy Bites are a delightful, no-bake snack that combines the flavors of classic monster cookies into a convenient, bite-sized treat. Packed with oats, peanut butter, honey, and a mix of chocolate chips and M&M’s, these energy bites are perfect for a quick pick-me-up or a post-workout snack.

Ingredients

Units Scale
  • 1 cup creamy peanut butter (preferably natural, just peanuts and salt)
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed (optional, for added nutrition)
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&M’s

Instructions

  1. In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until the mixture is smooth and well blended.
  2. Add the rolled oats and ground flaxseed (if using) to the bowl. Mix thoroughly until all the ingredients are well incorporated.
  3. Fold in the mini chocolate chips and mini M&M’s, ensuring they are evenly distributed throughout the mixture.
  4. Using a cookie scoop or your hands, portion out the mixture and roll it into 1-inch balls. Place the formed balls onto a baking sheet lined with parchment paper.
  5. Refrigerate the energy bites for at least 30 minutes to allow them to firm up.
  6. Once set, transfer the energy bites to an airtight container. Store them in the refrigerator for up to one week or freeze them for up to two months.

Notes

  • For a vegan version, substitute honey with maple syrup and ensure the chocolate chips and M&M’s are dairy-free.
  • If the mixture is too dry and crumbly, add a bit more peanut butter or honey to achieve the desired consistency.
  • Feel free to customize your energy bites by adding ingredients like shredded coconut, chopped nuts, or dried fruits.
