- 4 cups thinly sliced potatoes (about 4 medium potatoes)
- 1 small onion, finely chopped
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 1/2 cups shredded cheddar cheese
- Cooking spray or extra butter for greasing
Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a 2-quart baking dish.
- In a saucepan over medium heat, melt butter. Add flour and stir constantly for 1-2 minutes to form a roux.
- Gradually whisk in milk, ensuring there are no lumps. Add salt, pepper, and garlic powder.
- Continue cooking and stirring until the sauce thickens, about 5-7 minutes.
- Stir in 1 cup of shredded cheddar cheese until melted and smooth. Remove from heat.
- Layer half the sliced potatoes in the prepared baking dish. Top with half the chopped onions and pour over half of the cheese sauce.
- Repeat with remaining potatoes, onions, and cheese sauce.
- Sprinkle remaining 1/2 cup of cheese on top.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake an additional 20-25 minutes, until potatoes are tender and top is golden and bubbly.
- Let sit for 10 minutes before serving.
Notes
- For a richer flavor, use half-and-half or heavy cream instead of milk.
- Add cooked ham or bacon for a heartier dish.
- Yukon Gold or Russet potatoes work best.
