- 2 1/2 cups shredded coconut (plus extra for rolling)
- 1 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- Optional: 1/2 cup melted chocolate (for dipping)
Instructions
- In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. Mix until well combined and a sticky dough forms.
- Using your hands, take small portions of the mixture and roll them into 1-inch balls.
- Roll each ball in extra shredded coconut to coat.
- If desired, dip the coconut balls into melted chocolate for a more indulgent treat. Let the chocolate set on parchment paper.
- Place the finished balls on a tray and refrigerate for at least 1 hour to firm up.
- Serve chilled and enjoy!
