Description

These No-Bake Coconut Pecan Praline Cookies are rich, buttery, and filled with toasted pecans and shredded coconut. They come together quickly on the stovetop and require no oven timeโ€”just mix, drop, and let them set! Perfect for holidays, potlucks, or whenever you need a quick and easy sweet treat.


Ingredients

  • 1 1/2 cups granulated sugar
  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 1/2 cups chopped pecans
  • 1/4 teaspoon salt

Instructions

  • Prepare a Baking Sheet โ€“ Line a baking sheet with parchment paper or a silicone mat. Set aside.
  • Cook the Sugar Mixture โ€“ In a medium saucepan over medium heat, combine granulated sugar, brown sugar, butter, evaporated milk, and salt. Stir until the butter melts.
  • Boil & Thicken โ€“ Bring the mixture to a rolling boil. Boil for 3 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat.
  • Add the Mix-Ins โ€“ Stir in the vanilla extract, shredded coconut, and chopped pecans until fully combined.
  • Scoop & Shape โ€“ Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
  • Let Them Set โ€“ Allow the cookies to cool at room temperature for about 30 minutes or until firm.
