These No-Bake Coconut Pecan Praline Cookies are rich, buttery, and filled with toasted pecans and shredded coconut. They come together quickly on the stovetop and require no oven timeโjust mix, drop, and let them set! Perfect for holidays, potlucks, or whenever you need a quick and easy sweet treat.

- 1 1/2 cups granulated sugar
- 3/4 cup brown sugar, packed
- 1/2 cup unsalted butter
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 2 cups sweetened shredded coconut
- 1 1/2 cups chopped pecans
- 1/4 teaspoon salt
Instructions
- Prepare a Baking Sheet โ Line a baking sheet with parchment paper or a silicone mat. Set aside.
- Cook the Sugar Mixture โ In a medium saucepan over medium heat, combine granulated sugar, brown sugar, butter, evaporated milk, and salt. Stir until the butter melts.
- Boil & Thicken โ Bring the mixture to a rolling boil. Boil for 3 minutes, stirring occasionally, until the mixture thickens slightly. Remove from heat.
- Add the Mix-Ins โ Stir in the vanilla extract, shredded coconut, and chopped pecans until fully combined.
- Scoop & Shape โ Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
- Let Them Set โ Allow the cookies to cool at room temperature for about 30 minutes or until firm.
- Enjoy! โ Once set, remove the cookies from the parchment and enjoy!
Notes
- If your cookies arenโt setting properly, try boiling the sugar mixture for an additional 30 seconds to 1 minute.
- Store leftovers in an airtight container at room temperature for up to 1 week or in the fridge for 2 weeks.
- You can use toasted coconut for extra flavor!
