These No Bake Peanut Butter Cornflake Bars are a quick, nostalgic treat that requires just 5 ingredients and zero oven time. Crunchy, sweet, and salty, they make the perfect snack or dessert for busy days, potlucks, or when you want to satisfy your sweet tooth in a hurry.

Cornflake Base
- 4 cups cornflake cereal
Syrup Mixture
- 3/4 cup creamy peanut butter
- 1 cup light corn syrup
- 1/2 cup granulated sugar
Optional Topping
- 1/2 cup semisweet chocolate chips, melted (optional, for drizzling or spreading)
Instructions
- Prepare Pan
Line an 8×8-inch or 9×9-inch baking pan with parchment paper or lightly grease it. This will make it easier to lift out and slice the bars later. - Make the Syrup Mixture
In a medium saucepan over medium heat, combine corn syrup and granulated sugar. Stir often and heat just until the sugar dissolves and the mixture begins to bubble gently (do not let it boil hard). Remove from heat and immediately stir in peanut butter until smooth and fully combined. - Add Cornflakes
Working quickly, pour the peanut butter mixture over the cornflakes in a large mixing bowl. Use a spatula to gently but thoroughly mix, coating all the cereal evenly. - Press Into Pan
Transfer the mixture into the prepared pan. Press it down firmly and evenly using a spatula or a piece of wax paper. (Slightly damp hands can also help prevent sticking.) - Optional Chocolate Topping
If desired, melt chocolate chips in a microwave-safe bowl in short bursts or over a double boiler. Drizzle or spread the melted chocolate over the top of the bars for extra flavor. - Cool and Slice
Allow the bars to cool at room temperature for about 1 hour, or refrigerate for faster setting. Once firm, lift the bars out of the pan and cut into squares.
Notes
- Be careful not to overheat the syrup mixture; overheating can make the bars hard.
- Switch up the flavor by using almond or cashew butter in place of peanut butter.
- For a festive touch, add a handful of mini chocolate chips or sprinkles on top before the chocolate sets.
- Store bars in an airtight container at room temperature for up to 4 days, or in the fridge for up to 1 week.
