For the Old Bay Aioli:
- 1/3 cup mayonnaise

- 3/4 teaspoon fresh lime juice

For the Shrimp Filling:
- 1 tablespoon extra-virgin olive oil
- 1/2 yellow onion, finely chopped
- 1 small green bell pepper, diced
- 2 cloves garlic, thinly sliced
- 1 pound small shrimp, peeled and deveined, tails removed
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- Kosher salt and freshly ground black pepper, to taste
For Assembling the Burritos:
- 4 large flour tortillas, warmed
- 1 cup cooked long-grain white rice
- 1 cup cooked black beans, rinsed and drained
- 3/4 cup shredded Mexican cheese blend
- 1 cup shredded lettuce
- 1 cup pico de gallo, drained
- 1 avocado, thinly sliced
- 2 tablespoons chopped chives, plus more for garnish
Instructions
- Prepare the Old Bay Aioli:
- In a small bowl, whisk together the mayonnaise, Sriracha, lime juice, and Old Bay seasoning until smooth.
- Taste and add a pinch of kosher salt if desired.
- Set aside.
- Cook the Shrimp Filling:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped onion and diced bell pepper; sautรฉ for about 2-3 minutes until they begin to soften.
- Stir in the sliced garlic and cook for an additional 30 seconds until fragrant.
- Add the shrimp to the skillet and season with ground cumin, paprika, salt, and pepper.
- Cook the shrimp for about 3-4 minutes, stirring occasionally, until they are pink and cooked through.
- Remove from heat.
- Assemble the Burritos:
- Lay a warmed flour tortilla on a flat surface.
- In the center of the tortilla, layer 1/4 cup of cooked rice and 1/4 cup of black beans.
- Top with a portion of the shrimp mixture, then sprinkle with shredded cheese.
- Add shredded lettuce, a spoonful of pico de gallo, and a few avocado slices.
- Drizzle with the prepared Old Bay aioli and sprinkle with chopped chives.
- Fold in the sides of the tortilla and roll it up tightly to form a burrito.
- Repeat with the remaining tortillas and fillings.
- Serve:
- Slice the burritos in half if desired.
- Garnish with additional chives and a sprinkle of Old Bay seasoning.
- Serve warm, with extra aioli on the side for dipping.
