Description

Instructions

  1. Prepare the Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it with butter. Set aside.
  2. Combine Sugar Mixture: In a medium saucepan, mix together the sugar, corn syrup, water, and salt. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil.
  3. Add Peanuts: Once boiling, add the peanuts. Continue cooking, stirring constantly, until the temperature reaches 300°F (150°C) on a candy thermometer. This is known as the hard crack stage.
  4. Incorporate Final Ingredients: Remove the saucepan from heat. Quickly stir in the butter, baking soda, and vanilla extract. The mixture will foam and become lighter in color.
  5. Spread the Brittle: Immediately pour the mixture onto the prepared baking sheet. Use a spatula to spread it into a thin, even layer. Work quickly, as the brittle will start to harden rapidly.
  6. Cool and Break: Allow the brittle to cool completely, about 30 minutes. Once hardened, break it into pieces of your desired size.

  • Storage: Store the peanut brittle in an airtight container at room temperature for up to 2 weeks. Avoid humidity, as moisture can make the brittle sticky.
