Scale
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1/4 teaspoon salt
- 2 cups salted roasted peanuts
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons vanilla extract
Instructions
- Prepare the Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it with butter. Set aside.
- Combine Sugar Mixture: In a medium saucepan, mix together the sugar, corn syrup, water, and salt. Cook over medium heat, stirring occasionally, until the mixture comes to a gentle boil.
- Add Peanuts: Once boiling, add the peanuts. Continue cooking, stirring constantly, until the temperature reaches 300°F (150°C) on a candy thermometer. This is known as the hard crack stage.
- Incorporate Final Ingredients: Remove the saucepan from heat. Quickly stir in the butter, baking soda, and vanilla extract. The mixture will foam and become lighter in color.
- Spread the Brittle: Immediately pour the mixture onto the prepared baking sheet. Use a spatula to spread it into a thin, even layer. Work quickly, as the brittle will start to harden rapidly.
- Cool and Break: Allow the brittle to cool completely, about 30 minutes. Once hardened, break it into pieces of your desired size.
Notes
- Storage: Store the peanut brittle in an airtight container at room temperature for up to 2 weeks. Avoid humidity, as moisture can make the brittle sticky.
- Safety Tip: The sugar mixture is extremely hot. Exercise caution to prevent burns, and keep children and pets away from the cooking area.
