Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg, almond extract (or vanilla), and salt. Beat until well combined.
  4. Gradually add the flour to the wet ingredients, mixing until the dough comes together.
  5. Load the dough into a cookie press fitted with your desired disc shape. Press the dough onto ungreased baking sheets, spacing the cookies about 1 inch apart.
  6. Decorate with sprinkles or colored sugar if desired.
  7. Bake in the preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden.
  8. Allow the cookies to cool on the baking sheet for 2-3 minutes, then transfer them to a wire rack to cool completely.
