- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 red onion, sliced
- Fresh basil, chopped (for garnish)
Instructions
- Preheat the oven to 375ยฐF (190ยฐC) and lightly grease a large oven-safe skillet.
- In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, garlic powder, dried thyme, salt, and pepper.
- Heat the olive oil in the skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. Add the cherry tomatoes, zucchini, and red onion to the skillet. Stir the vegetables to coat them in the remaining oil.
- Place the chicken back in the skillet on top of the vegetables. Pour the balsamic glaze over the chicken and vegetables.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC) and is fully cooked through.
- Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh chopped basil.
- Serve the one-pan balsamic chicken hot with the roasted vegetables.
Notes
- You can substitute the zucchini with other vegetables like bell peppers or asparagus.
- If you want a thicker glaze, simmer the balsamic vinegar mixture on the stove for 5-7 minutes before using it on the chicken.
- This dish pairs well with rice or mashed potatoes for a complete meal.
