Description

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • Fresh basil, chopped (for garnish)

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC) and lightly grease a large oven-safe skillet.
  2. In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, garlic powder, dried thyme, salt, and pepper.
  3. Heat the olive oil in the skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. Add the cherry tomatoes, zucchini, and red onion to the skillet. Stir the vegetables to coat them in the remaining oil.
  5. Place the chicken back in the skillet on top of the vegetables. Pour the balsamic glaze over the chicken and vegetables.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC) and is fully cooked through.
  7. Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh chopped basil.
  8. Serve the one-pan balsamic chicken hot with the roasted vegetables.

Notes

  • You can substitute the zucchini with other vegetables like bell peppers or asparagus.
  • If you want a thicker glaze, simmer the balsamic vinegar mixture on the stove for 5-7 minutes before using it on the chicken.
