  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups chicken broth
  • 1 (24 oz) jar marinara sauce
  • 12 oz (340g) penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream (optional, for extra richness)
  • 1/4 cup fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken:ย In a large pot or deep skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for about 5โ€“6 minutes until browned. Remove from the pot and set aside.
  2. Sautรฉ Garlic:ย In the same pot, add minced garlic and red pepper flakes (if using). Cook for about 30 seconds until fragrant.
  3. Add Liquids & Pasta:ย Pour in the chicken broth and marinara sauce, then bring to a simmer. Add the uncooked pasta and stir well.
  4. Cook the Pasta:ย Reduce heat to medium-low and cover. Let it cook for about 12โ€“15 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
  5. Melt the Cheese:ย Stir in the cooked chicken and heavy cream (if using). Sprinkle mozzarella and Parmesan cheese over the top, then cover for 2โ€“3 minutes until the cheese melts.
