- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 3 cups chicken broth
- 1 (24 oz) jar marinara sauce
- 12 oz (340g) penne or rotini pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream (optional, for extra richness)
- 1/4 cup fresh basil or parsley, chopped (for garnish)
Instructions
- Cook the Chicken:ย In a large pot or deep skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for about 5โ6 minutes until browned. Remove from the pot and set aside.
- Sautรฉ Garlic:ย In the same pot, add minced garlic and red pepper flakes (if using). Cook for about 30 seconds until fragrant.
- Add Liquids & Pasta:ย Pour in the chicken broth and marinara sauce, then bring to a simmer. Add the uncooked pasta and stir well.
- Cook the Pasta:ย Reduce heat to medium-low and cover. Let it cook for about 12โ15 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
- Melt the Cheese:ย Stir in the cooked chicken and heavy cream (if using). Sprinkle mozzarella and Parmesan cheese over the top, then cover for 2โ3 minutes until the cheese melts.
- Serve & Enjoy:ย Garnish with fresh basil or parsley and serve warm.
