Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips

  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne or other short pasta
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (optional)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium-high heat.
  2. Season chicken strips with salt, pepper, and Italian seasoning, then add to the pot and cook until browned on all sides. Remove and set aside.
  3. Add garlic, red pepper flakes, and sun-dried tomatoes to the pot and sauté for 1-2 minutes.
  4. Pour in chicken broth and heavy cream, bringing the mixture to a simmer.
  5. Add pasta and stir to combine. Reduce heat to medium and cook uncovered, stirring occasionally, until pasta is al dente (about 10-12 minutes).
  6. Return chicken to the pot and cook for another 2-3 minutes until heated through and fully cooked.
  7. Stir in Parmesan cheese until melted and sauce thickens slightly.
  8. Garnish with fresh basil if desired and serve hot.
