- 1/2 cup sun-dried tomatoes, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or other short pasta
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (optional)
Instructions
- Heat olive oil in a large pot or deep skillet over medium-high heat.
- Season chicken strips with salt, pepper, and Italian seasoning, then add to the pot and cook until browned on all sides. Remove and set aside.
- Add garlic, red pepper flakes, and sun-dried tomatoes to the pot and sauté for 1-2 minutes.
- Pour in chicken broth and heavy cream, bringing the mixture to a simmer.
- Add pasta and stir to combine. Reduce heat to medium and cook uncovered, stirring occasionally, until pasta is al dente (about 10-12 minutes).
- Return chicken to the pot and cook for another 2-3 minutes until heated through and fully cooked.
- Stir in Parmesan cheese until melted and sauce thickens slightly.
- Garnish with fresh basil if desired and serve hot.
