- 12 oz pasta (penne or shells)
- 1 lb smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add smoked sausage slices and cook until browned, about 3โ4 minutes per side. Remove and set aside.
- In the same pot, add onion and cook until translucent, about 2โ3 minutes.
- Stir in garlic and cook until fragrant, about 30 seconds.
- Add diced tomatoes (with juices), broth, Italian seasoning, red pepper flakes, salt, and pepper.
- Bring to a simmer, then stir in the pasta.
- Cover and cook, stirring occasionally, until pasta is al dente, about 10โ12 minutes.
- Return sausage to the pot and stir in heavy cream.
- Reduce heat to low and add cheddar cheese, stirring until melted and creamy.
- Adjust seasoning, garnish with parsley, and serve hot.
