Description

Crispy, golden taquitos filled with seasoned ground beef, cheese, and spices, baked to perfection in the oven. A healthier alternative to fried taquitos, these are easy to make and perfect for a snack, appetizer, or a quick meal! Pair with salsa, guacamole, or sour cream for dipping.

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese (or a cheese blend)
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil spray

Instructions

  1. Preheat the ovenย to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or a non-stick baking mat.
  2. Cook the beef mixture:ย In a skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks. Drain any excess grease.
  3. Add the onion and garlic to the skillet and sautรฉ for 2-3 minutes until softened.
  4. Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for another minute to toast the spices.
  5. Add the salsa to the beef mixture and stir until well combined. Remove from heat and allow to cool slightly.
  6. Assemble the taquitos:ย Place a small amount of the beef mixture (about 2 tablespoons) and a sprinkle of cheese on one edge of each tortilla. Roll the tortilla tightly around the filling and place seam-side down on the prepared baking sheet.
  7. Lightly spray the rolled taquitos with cooking spray to help them crisp up in the oven.
  8. Bakeย for 15-20 minutes, or until the taquitos are golden and crispy.
  9. Remove from the oven and serve warm with your favorite dipping sauces.

  • For extra crispiness, you can flip the taquitos halfway through baking.
