Crispy, golden taquitos filled with seasoned ground beef, cheese, and spices, baked to perfection in the oven. A healthier alternative to fried taquitos, these are easy to make and perfect for a snack, appetizer, or a quick meal! Pair with salsa, guacamole, or sour cream for dipping.

- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup salsa
- 1 cup shredded cheddar cheese (or a cheese blend)
- 10 small flour or corn tortillas
- Cooking spray or olive oil spray
Instructions
- Preheat the ovenย to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or a non-stick baking mat.
- Cook the beef mixture:ย In a skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks. Drain any excess grease.
- Add the onion and garlic to the skillet and sautรฉ for 2-3 minutes until softened.
- Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for another minute to toast the spices.
- Add the salsa to the beef mixture and stir until well combined. Remove from heat and allow to cool slightly.
- Assemble the taquitos:ย Place a small amount of the beef mixture (about 2 tablespoons) and a sprinkle of cheese on one edge of each tortilla. Roll the tortilla tightly around the filling and place seam-side down on the prepared baking sheet.
- Lightly spray the rolled taquitos with cooking spray to help them crisp up in the oven.
- Bakeย for 15-20 minutes, or until the taquitos are golden and crispy.
- Remove from the oven and serve warm with your favorite dipping sauces.
Notes
- For extra crispiness, you can flip the taquitos halfway through baking.
- Substitute ground turkey or chicken for a lighter option.
- Add diced jalapeรฑos or green chiles to the beef mixture for a spicy kick.
