    • 1 cup frozen corn
    • 1 cup black beans, rinsed and drained
    • 2 cups shredded Mexican cheese blend
    • 2 cups milk (or heavy cream for a richer dish)
    • 1/2 cup sour cream
    • 1/2 tsp garlic powder
    • 1/2 tsp chili powder
    • Salt and pepper, to taste
  • Optional Toppings:
    • Chopped fresh cilantro
    • Diced avocado
    • Sliced jalapeรฑos

Instructions

  1. Prepare the Pasta:
    Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Beef Mixture:
    In a large skillet, cook ground beef or turkey over medium heat until browned. Add diced onion and cook until softened, about 3 minutes. Stir in taco seasoning, diced tomatoes, corn, black beans, garlic powder, chili powder, salt, and pepper. Simmer for 5 minutes.
  3. Assemble the Pasta:
    In a large mixing bowl, combine cooked pasta, the beef mixture, milk, sour cream, and 1 cup of cheese. Mix until well combined.
  4. Refrigerate Overnight:
    Transfer the mixture to a greased 9×13-inch baking dish. Cover tightly with foil and refrigerate overnight.
