- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk

- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toppings (Optional)
- 1 cup shredded cheddar cheese
- Maple syrup, for serving
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned and cooked through. Drain excess fat, then set aside to cool slightly.
- Mix Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract. Pour wet ingredients into dry, stirring until just combined (a few lumps are okay).
- Assemble Casserole: Pour the pancake batter into the prepared baking dish and spread evenly. Sprinkle cooked sausage over the batter.
- Prepare and Add Egg Mixture: In a medium bowl, whisk together eggs, milk, salt, and pepper. Pour evenly over the sausage and pancake batter in the dish.
- Add Cheese (Optional): Sprinkle shredded cheddar cheese over the top for extra flavor.
- Bake: Bake for 40-45 minutes, or until the center is set and the top is lightly golden. A toothpick inserted in the center should come out clean.
- Serve: Allow to cool for a few minutes, then slice and serve warm. Drizzle with maple syrup if desired.
Notes
- To save time, use a boxed pancake mix in place of the homemade batter.
- You can substitute turkey sausage for a lighter version.
- Leftovers can be refrigerated for up to 3 days and reheated in the microwave or oven.
- Add your favorite veggies (like spinach or bell peppers) for added nutrition and flavor.
