- 6 medium-sized potatoes (russet or Yukon gold), halved
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme or Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- In a small bowl, mix the Parmesan cheese, garlic powder, paprika, thyme, salt, and pepper.
- Drizzle the olive oil evenly over the bottom of a large baking dish or sheet pan. Spread the Parmesan mixture evenly across the oiled surface.
- Place the potato halves cut side down onto the Parmesan mixture, pressing gently to ensure the cheese sticks to the potatoes.
- Bake in the preheated oven for 35โ40 minutes, or until the potatoes are tender and the Parmesan crust is golden and crisp.
- Remove from the oven and let cool for 5 minutes. Carefully use a spatula to lift the potatoes from the pan to preserve the Parmesan crust.
- Garnish with fresh parsley, if desired, and serve immediately.

- For an extra kick, add a pinch of chili powder or cayenne pepper to the Parmesan mixture.
