  • 6 medium-sized potatoes (russet or Yukon gold), halved
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. In a small bowl, mix the Parmesan cheese, garlic powder, paprika, thyme, salt, and pepper.
  3. Drizzle the olive oil evenly over the bottom of a large baking dish or sheet pan. Spread the Parmesan mixture evenly across the oiled surface.
  4. Place the potato halves cut side down onto the Parmesan mixture, pressing gently to ensure the cheese sticks to the potatoes.
  5. Bake in the preheated oven for 35โ€“40 minutes, or until the potatoes are tender and the Parmesan crust is golden and crisp.
  6. Remove from the oven and let cool for 5 minutes. Carefully use a spatula to lift the potatoes from the pan to preserve the Parmesan crust.
  7. Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • For an extra kick, add a pinch of chili powder or cayenne pepper to the Parmesan mixture.
