- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil (for brushing)
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper or foil.
- In a shallow bowl, mix the Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and pepper.
- Pat the cod fillets dry with a paper towel. Brush each fillet lightly with olive oil on both sides.
- Press the top of each cod fillet into the Parmesan mixture, ensuring a generous coating. Place the fillets crust-side up on the prepared baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until the cod is opaque and flakes easily with a fork. The crust should be golden brown.
- Serve immediately with lemon wedges on the side.
Notes
- For extra flavor, add a pinch of Italian seasoning or parsley to the breadcrumb mixture.
- If using frozen cod, make sure it is fully thawed and patted dry to prevent a soggy crust.
