- For the filling:
- 6-8 fresh peaches, peeled and sliced (or 6 cups)
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tsp ground cinnamon (optional)
- For the topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 stick (1/2 cup) unsalted butter, melted
- 3/4 cup whole milk
Instructions
- Preheat Oven:ย Preheat your oven to 375ยฐF (190ยฐC).
- Prepare the Filling:
- In a large mixing bowl, combine sliced peaches, sugar, vanilla extract, lemon juice, cornstarch, and cinnamon (if using). Toss well to coat the peaches evenly.
- Pour the peach mixture into a greased 9ร13-inch baking dish. Spread evenly.
- Make the Topping:
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in melted butter and milk until a smooth batter forms.
- Assemble:
- Pour the batter over the peaches, spreading it out gently with a spatula. The topping doesnโt need to cover the peaches completely.
- Bake:
- Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
- Serve:
- Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream.
Notes
- If using canned peaches, drain them well before using and reduce the sugar in the filling to ยฝ cup.
- Frozen peaches can also be used. Thaw and drain them before mixing with the other filling ingredients.
- For extra flavor, sprinkle a pinch of nutmeg over the peaches.
