- 1 large ripe banana, mashed
- 1/2 cup creamy peanut butter (natural preferred)
- 1/2 cup dark chocolate chips (or milk chocolate if preferred)
- 1 tablespoon coconut oil
- Pinch of salt (optional)
Instructions
- Prepare the filling: In a bowl, mash the banana until smooth. Mix in the peanut butter until well combined. Add a pinch of salt if you prefer a slightly salted taste. Set aside.
- Melt the chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until completely melted and smooth.
- Assemble the cups: Line a muffin tin with paper liners or use silicone molds. Spoon about 1 teaspoon of melted chocolate into the bottom of each cup, spreading it evenly to cover the base.
- Add the filling: Place a spoonful of the banana and peanut butter mixture on top of the chocolate layer in each cup. Then, spoon more melted chocolate over the filling to cover it completely.
- Chill: Place the cups in the freezer for about 30 minutes or until the chocolate is fully set.
- Serve: Once firm, remove the cups from the muffin tin and enjoy! Store any leftovers in the fridge or freezer.
