Description

These Peanut Butter Banana Cups are a delicious and healthy treat that combines creamy peanut butter and sweet bananas, all wrapped up in a smooth chocolate shell. Theyโ€™re perfect for a quick snack or dessert and easy to make with just a few simple ingredients.

Ingredients

Units Scale
  • 1 large ripe banana, mashed
  • 1/2 cup creamy peanut butter (natural preferred)
  • 1/2 cup dark chocolate chips (or milk chocolate if preferred)
  • 1 tablespoon coconut oil
  • Pinch of salt (optional)

Instructions

  1. Prepare the filling: In a bowl, mash the banana until smooth. Mix in the peanut butter until well combined. Add a pinch of salt if you prefer a slightly salted taste. Set aside.
  2. Melt the chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until completely melted and smooth.
  3. Assemble the cups: Line a muffin tin with paper liners or use silicone molds. Spoon about 1 teaspoon of melted chocolate into the bottom of each cup, spreading it evenly to cover the base.
  4. Add the filling: Place a spoonful of the banana and peanut butter mixture on top of the chocolate layer in each cup. Then, spoon more melted chocolate over the filling to cover it completely.
  5. Chill: Place the cups in the freezer for about 30 minutes or until the chocolate is fully set.
  6. Serve: Once firm, remove the cups from the muffin tin and enjoy! Store any leftovers in the fridge or freezer.

Notes

  • You can customize these cups by adding crushed nuts or shredded coconut on top for extra texture.
  • For a lower sugar version, use unsweetened chocolate or sugar-free chocolate chips.
