- 1 cup chopped pecans
- 1 cup packed brown sugar
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 tsp vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups well.
- In a medium bowl, mix the chopped pecans, brown sugar, and flour.
- In a separate bowl, whisk together the eggs and melted butter until well combined. Add the vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- These muffins freeze well! Store in an airtight container for up to 3 months.
- For extra flavor, toast the pecans before chopping.
