Description

These Pecan Pie Muffins combine the rich, buttery flavor of pecan pie with the soft, tender crumb of a muffin. Ingredients

  • 1 cup chopped pecans
  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp vanilla extract (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups well.
  • In a medium bowl, mix the chopped pecans, brown sugar, and flour.
  • In a separate bowl, whisk together the eggs and melted butter until well combined. Add the vanilla extract if using.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

  • These muffins freeze well! Store in an airtight container for up to 3 months.
  • For extra flavor, toast the pecans before chopping.
