Description

Pickle de Gallo is a zesty, crunchy relish inspired by classic pico de gallo, but swaps out tomatoes for dill pickles. Combining tangy pickles with onions, jalapeรฑos, and fresh herbs, this unique dip is a fun twist on traditional salsaโ€”perfect as a topping for burgers, hot dogs, tacos, or served with chips for a memorable appetizer or snack.

Ingredients

Units Scale

Pickle Mixture

  • 1 cup dill pickles, finely diced
  • 1/4 cup dill pickle brine

Vegetables & Herbs

  • 1/2 cup red onion, finely diced
  • 1 jalapeรฑo pepper, seeded and finely diced (more for extra heat)
  • 1/4 cup fresh cilantro, chopped

Additional Flavor

  • 12 tablespoons lime juice (to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Prep the pickles. Finely dice the dill pickles and transfer to a mixing bowl. Add the dill pickle brine to the bowl, which adds extra tang and moisture to the mixture.
  2. Chop the vegetables and herbs. Finely dice the red onion and jalapeรฑo pepper (removing the seeds for a milder dip, or leaving some in for added heat). Chop the fresh cilantro. Add all these to the bowl with the pickles.
  3. Add flavorings. Pour in the lime juice, sprinkle in the black pepper, and add garlic powder if using. Toss everything together until well combined, ensuring the flavors are evenly distributed throughout the mixture.
  4. Chill the relish. Cover the bowl and refrigerate the Pickle de Gallo for at least 30 minutes to allow the flavors to mingle. This step enhances the overall flavor and texture.
  5. Serve. Stir the Pickle de Gallo just before serving. Enjoy it as a dip with tortilla chips, or use it as a crunchy, tangy topping for burgers, hot dogs, tacos, or grilled meats.

Notes

  • For a spicier kick, leave the jalapeรฑo seeds in or add a splash of hot sauce.
  • You can substitute white onion for red onion for a sharper flavor.
  • This relish keeps well in the fridge for up to 3 days; stir before serving as it may release some liquid over time.
  • Try adding diced tomatoes, carrots, or radishes for a colorful variation.
