  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 3 cups cooked jasmine or long-grain white rice
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)

For the Sauce:

  • 1/3 cup soy sauce (low-sodium preferred)
  • 1/4 cup pineapple juice (reserved from canned pineapple or fresh)
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar (or white vinegar)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)
  • 1 tbsp cornstarch + 2 tbsp water (slurry for thickening)

Instructions

  1. Prepare the Sauce:
    In a small bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, garlic, ginger, and cornstarch slurry. Set aside.
  2. Cook the Chicken:
    Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces, season with a pinch of salt and pepper, and cook until golden brown and cooked through (about 5-7 minutes). Remove chicken from the pan and set aside.
  3. Sautรฉ the Vegetables:
    In the same pan, add the remaining tablespoon of oil. Add diced bell peppers and cook for 2-3 minutes until slightly tender but still crisp.
  4. Combine Everything:
