  • 1 package (3 oz) strawberry or raspberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 can (15 oz) mandarin oranges, drained
  • 1 cup mini marshmallows
  • 1 cup whipped topping or whipped cream
  • 1/2 cup sweetened shredded coconut (optional)
  • 1/2 cup maraschino cherries, halved (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. In a medium bowl, dissolve the gelatin in 1 cup of boiling water. Stir well until fully dissolved.
  2. Add 1 cup of cold water to the gelatin mixture and stir to combine. Let it cool slightly for about 10 minutes.
  3. Once the gelatin has cooled but is still liquid, stir in the drained crushed pineapple and mandarin oranges.
  4. Gently fold in the mini marshmallows, whipped topping (or whipped cream), and shredded coconut (if using) until well combined.
  5. If desired, fold in halved maraschino cherries and chopped nuts for extra flavor and texture.
  6. Cover the bowl and refrigerate for at least 2 hours or until the salad is set and chilled.
  7. Before serving, give the salad a gentle stir to mix any settled ingredients. Garnish with extra cherries or nuts if desired.
