- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp sugar
- 1/2 tsp salt
- 1 1/4 cups milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup shredded mozzarella cheese
- 1/2 cup mini pepperoni slices
- 1/2 cup pizza sauce (plus extra for dipping)
Instructions
- Preheat waffle iron and grease lightly.
- In a bowl, whisk flour, baking powder, sugar, and salt.
- In another bowl, beat eggs, milk, and melted butter until combined.
- Pour wet ingredients into dry; stir until just mixed.
- Pour half the batter into waffle iron.
- Top with mozzarella, pepperoni, and a spoonful of pizza sauce.
- Cover with remaining batter.
- Close waffle iron and cook until golden and crisp, about 5 minutes.
- Carefully remove waffle snack and repeat with remaining batter.
- Serve warm with extra pizza sauce for dipping.
Notes
- For veggie version, substitute pepperoni with chopped bell peppers and olives.
- Waffles can be made ahead and reheated in toaster oven.
- Adjust cheese and toppings to taste.
- To make them glutenโfree, use GF flour blend.
