Ingredients

  • 1 tbsp baking powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/2 cup pizza sauce (plus extra for dipping)

Instructions

  1. Preheat waffle iron and grease lightly.
  2. In a bowl, whisk flour, baking powder, sugar, and salt.
  3. In another bowl, beat eggs, milk, and melted butter until combined.
  4. Pour wet ingredients into dry; stir until just mixed.
  5. Pour half the batter into waffle iron.
  6. Top with mozzarella, pepperoni, and a spoonful of pizza sauce.
  7. Cover with remaining batter.
  8. Close waffle iron and cook until golden and crisp, about 5 minutes.
  9. Carefully remove waffle snack and repeat with remaining batter.
  10. Serve warm with extra pizza sauce for dipping.

Notes

  • For veggie version, substitute pepperoni with chopped bell peppers and olives.
