- 6 large egg whites
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell peppers (any color)
- 1/4 cup spinach, chopped
- 1 tablespoon onion, finely diced
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 teaspoon olive oil (for greasing the muffin tin)
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil or non-stick spray.
- In a bowl, whisk the egg whites until frothy. Add the shredded cheddar cheese, diced bell peppers, spinach, onion, garlic powder, salt, and pepper. Stir until everything is well combined.
- Pour the egg white mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set and lightly golden on top.
- Remove from the oven and let them cool for a few minutes. Use a spoon to gently remove the egg white bites from the muffin tin.
- Serve warm, or store in the fridge for up to 3 days. These protein egg white bites are great for meal prep!
