Creamy peanut butter and chocolate centers are rolled in powdered sugar and crushed Chex for a rich bite-size treat with the perfect crunch. No baking needed, and they’re great for parties, gifting, or just snacking.
Ingredients
-
1 cup semi-sweet chocolate chips
-
1/2 cup creamy peanut butter
-
1/4 cup unsalted butter
-
1 teaspoon vanilla extract
-
2 cups powdered sugar (divided)
-
1 1/2 cups Rice Chex cereal, crushed
-
Optional: Pinch of salt (if using unsalted peanut butter)
Instructions
-
In a medium microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring between each, until smooth and melted (about 1–2 minutes total).
-
Stir in the vanilla extract and a pinch of salt, if using.
-
Chill the mixture in the refrigerator for 1–2 hours, or until firm enough to scoop.
-
Once chilled, scoop into 1-inch balls using a cookie scoop or spoon. Roll between your hands to smooth them out.
-
Roll each truffle in crushed Chex, gently pressing the cereal onto the surface.
-
Then roll each truffle in powdered sugar. Repeat if you want them extra coated.
-
Chill for another 30 minutes to set, then serve or store in an airtight container in the fridge.
Notes
-
Use crunchy peanut butter if you want extra texture.
-
You can mix some crushed Chex into the chocolate mixture before chilling for added crunch inside.
-
Want them extra chocolatey? Drizzle with melted chocolate before dusting with powdered sugar.
-
Best served chilled but can sit at room temperature for about 1 hour.
