For the Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tsp white vinegar
- 2 tsp vanilla extract
- 1 tsp purple gel food coloring (adjust for desired shade)
For the Cream Cheese Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 16 oz cream cheese, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- Pinch of salt
Instructions
For the Cake:
- Preheat your oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans, or line with parchment paper.
- In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
- In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, vinegar, vanilla extract, and purple food coloring.
- Gradually mix the wet ingredients into the dry ingredients until well combined. Be careful not to overmix.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30โ35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
For the Cream Cheese Frosting:
- In a large mixing bowl, beat the butter and cream cheese together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating on low speed until incorporated.
- Mix in the vanilla extract and salt. Increase the speed and beat until light and fluffy.
To Assemble:
- Place one cake layer on a serving plate or cake stand. Spread a layer of frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake.
- Decorate as desired and refrigerate for at least 30 minutes before serving to allow the frosting to set.
Notes
- For a deeper purple color, add a small amount of blue gel food coloring along with the purple.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
