For the Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar

  • 1 1/2 cups vegetable oil

  • 2 large eggs, room temperature
  • 2 tsp white vinegar
  • 2 tsp vanilla extract
  • 1 tsp purple gel food coloring (adjust for desired shade)

For the Cream Cheese Frosting:

  • 1 cup (2 sticks) unsalted butter, softened
  • 16 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • Pinch of salt

Instructions

For the Cake:

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans, or line with parchment paper.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, vinegar, vanilla extract, and purple food coloring.
  4. Gradually mix the wet ingredients into the dry ingredients until well combined. Be careful not to overmix.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30โ€“35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Cream Cheese Frosting:

  1. In a large mixing bowl, beat the butter and cream cheese together until smooth and creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating on low speed until incorporated.
  3. Mix in the vanilla extract and salt. Increase the speed and beat until light and fluffy.

To Assemble:

  1. Place one cake layer on a serving plate or cake stand. Spread a layer of frosting on top.
  2. Place the second cake layer on top and frost the top and sides of the cake.
  3. Decorate as desired and refrigerate for at least 30 minutes before serving to allow the frosting to set.

Notes

  • For a deeper purple color, add a small amount of blue gel food coloring along with the purple.
