Description

These Chili Oil Udon Noodles come together in just 10 minutes and pack a punch of flavor with a mix of chili oil, garlic, soy sauce, and chewy udon noodles. It’s bold, comforting, and totally addictive – your new favorite fast noodle fix!


Ingredients

  • 2 packs (7 oz each) fresh or frozen udon noodles

  • 2 tbsp chili oil with crispy bits (adjust to taste)

  • 1 tbsp soy sauce

  • 1 tsp dark soy sauce (optional, for color and depth)

  • 1 tsp rice vinegar or black vinegar

  • 2 garlic cloves, finely minced

  • 1 green onion, chopped (plus more for topping)

  • 1 tsp sesame oil

  • Pinch of sugar (optional, to balance flavors)

  • Toasted sesame seeds (for garnish)

  • Optional toppings: fried egg, bok choy, crushed peanuts, or seaweed flakes


Instructions

  • Cook the noodles:
    Bring a pot of water to a boil. Add udon noodles and cook according to package instructions (usually 2–3 minutes for fresh or frozen). Drain and set aside.

  • Make the sauce:
    In a heatproof bowl, combine chili oil, soy sauce, dark soy sauce, rice vinegar, garlic, green onions, sesame oil, and sugar (if using).

  • Toss and serve:
    Add hot cooked noodles to the sauce and toss to coat evenly. The heat from the noodles will lightly cook the garlic and green onions.

 

  • Garnish:
    Top with extra green onions, sesame seeds, and your favorite toppings. Serve immediately.


Notes

Adjust chili oil to your spice level – start small and add more to taste.

 

For protein, add a soft-boiled or fried egg, tofu, or leftover grilled chicken.

 

Want it saucier? Add 1–2 tbsp of hot noodle water when tossing.
