  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup pasta (small shapes like ditalini, elbow, or orzo)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, garlic, carrots, and celery. Sautรฉ for 5-7 minutes until vegetables are softened.
  • Pour in the diced tomatoes (with their juice) and the broth. Stir in the basil and oregano. Bring to a boil.
  • Once boiling, add the pasta. Reduce the heat to a simmer and cook for 8-10 minutes, or until the pasta is tender.
  • Season the soup with salt and pepper to taste.
  • Remove from heat and stir in fresh parsley if using.
  • Ladle the soup into bowls and garnish with grated Parmesan if desired.
