- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 cup pasta (small shapes like ditalini, elbow, or orzo)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
- Grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, garlic, carrots, and celery. Sautรฉ for 5-7 minutes until vegetables are softened.
- Pour in the diced tomatoes (with their juice) and the broth. Stir in the basil and oregano. Bring to a boil.
- Once boiling, add the pasta. Reduce the heat to a simmer and cook for 8-10 minutes, or until the pasta is tender.
- Season the soup with salt and pepper to taste.
- Remove from heat and stir in fresh parsley if using.
- Ladle the soup into bowls and garnish with grated Parmesan if desired.
