- 250 g mascarpone
- 200 g cream cheese
- 50 g powdered sugar (adjust to taste)
- 1 tsp vanilla extract
- 200 ml heavy cream, chilled
- For the Layers:
- 200 g fresh raspberries (plus extra for garnish)
- 100 g Raffaello pralines, crushed
- 100 g ladyfingers or shortbread cookies, crushed
- Optional Garnish:
- Grated white chocolate
- Mint leaves
Instructions
- Prepare the Cream:
In a mixing bowl, combine mascarpone, cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. - Whip the Cream:
In a separate bowl, whip the chilled heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture to create a light, fluffy cream. - Layer the Dessert:
- Begin with a layer of crushed cookies at the bottom of each glass.
- Add a layer of mascarpone cream.
- Sprinkle a handful of crushed Raffaello pralines on top.
- Add a layer of fresh raspberries.
- Repeat the layers until the glass is full, finishing with a layer of cream.
- Garnish and Serve:
Top each glass with fresh raspberries, grated white chocolate, and a mint leaf for decoration. Serve immediately or chill for up to 2 hours before serving.
Notes
- You can substitute mascarpone with cream cheese for a lighter version.
- Frozen raspberries can be used if fresh ones are unavailable; just thaw them beforehand.
