Instructions

  1. Prepare the Dates โ€“ If your dates are a bit dry, soak them in warm water for 5โ€“10 minutes, then drain well. This ensures the bites stay moist and blend easily.
  2. Blend the Dry Ingredients โ€“ In a food processor, combine the walnuts, cocoa powder, freeze-dried raspberries, and sea salt. Pulse until the walnuts are broken down into small crumbs.
  3. Add Dates and Vanilla โ€“ Add the pitted dates and vanilla extract to the processor. Blend until the mixture begins to clump and forms a sticky dough. The dough should hold together when pressed between your fingers.
  4. Form the Bites โ€“ Scoop out about 1โ€“2 tablespoons of the mixture, then roll into balls using your hands. Repeat until all the mixture is used.
  5. Coat the Bites (Optional) โ€“ Roll each bite in extra cocoa powder or crushed freeze-dried raspberries for an extra burst of flavor and a beautiful finish.
