- 1 cup Medjool dates, pitted
- 3/4 cup raw walnuts
- 1/4 cup unsweetened cocoa powder
- 1/2 cup freeze-dried raspberries
- 1 tsp vanilla extract

- 2 tbsp crushed freeze-dried raspberries, for coating
Instructions
- Prepare the Dates โ If your dates are a bit dry, soak them in warm water for 5โ10 minutes, then drain well. This ensures the bites stay moist and blend easily.
- Blend the Dry Ingredients โ In a food processor, combine the walnuts, cocoa powder, freeze-dried raspberries, and sea salt. Pulse until the walnuts are broken down into small crumbs.
- Add Dates and Vanilla โ Add the pitted dates and vanilla extract to the processor. Blend until the mixture begins to clump and forms a sticky dough. The dough should hold together when pressed between your fingers.
- Form the Bites โ Scoop out about 1โ2 tablespoons of the mixture, then roll into balls using your hands. Repeat until all the mixture is used.
- Coat the Bites (Optional) โ Roll each bite in extra cocoa powder or crushed freeze-dried raspberries for an extra burst of flavor and a beautiful finish.
- Chill and Serve โ Place the bites on a parchment-lined plate and chill in the fridge for at least 20 minutes to set. Enjoy straight from the fridge or at room temperature!

- Keep bites in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
- Feel free to swap walnuts for almonds, pecans, or cashews if desired.
