- 1 large egg
For the Filling:
- 1 package (8 ounces) cream cheese, softened
- 2 large eggs
- 1/2 cup (1 stick) unsalted butter, melted
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Instructions
- Preheat the Oven:ย Set your oven to 350ยฐF (175ยฐC). Lightly grease a 9ร13-inch baking dish with nonstick cooking spray.
- Prepare the Crust:ย In a large bowl, combine the red velvet cake mix, melted butter, and egg. Mix well until a dough forms. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
- Make the Filling:ย In another large bowl, beat the softened cream cheese until smooth. Add the eggs and vanilla extract, mixing until well combined. Gradually add the powdered sugar, mixing thoroughly after each addition. Finally, pour in the melted butter and mix until the filling is smooth and creamy.
- Assemble the Cake:ย Pour the cream cheese filling over the crust, spreading it evenly.
- Bake:ย Place the baking dish in the preheated oven and bake for 40 to 50 minutes. The edges should be set, and the center should still be slightly jiggly. Be careful not to overbake, as the gooey center is a signature characteristic of this cake.
- Cool and Serve:ย Allow the cake to cool completely in the pan. Once cooled, cut into squares. Optionally, dust with additional powdered sugar before serving.
Notes
- Storage:ย Store any leftovers in an airtight container at room temperature for up to 3 days.
- Serving Suggestion:ย This cake pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.
