For the Cookies:
- 2 cups all-purpose flour
- 2 tbsp cocoa powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp red food coloring
- 1/4 cup buttermilk
For the Cream Cheese Filling:
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Prepare the Cookie Dough:
- Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg, vanilla extract, and red food coloring.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until combined.
- Shape the Cookies:
- Scoop 1-inch balls of dough and place them on the prepared baking sheet, spacing them 2 inches apart.
- Use your thumb or the back of a spoon to create an indentation in the center of each ball.
- Bake the Cookies:
- Bake for 10โ12 minutes, or until the cookies are set and slightly puffed.
- Remove from the oven and let them cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
- Make the Cream Cheese Filling:
- In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Assemble the Cookies:
- Once the cookies are completely cool, spoon or pipe the cream cheese filling into the center of each cookie.
- Refrigerate for 15 minutes to set the filling before serving.
