Description

These Ritz S’mores Cookies combine the classic flavors of s’mores—marshmallow, chocolate, and graham crackers—with the salty crunch of Ritz crackers. They’re an easy, no-bake treat perfect for any occasion. Sweet, salty, crunchy, and chewy all in one bite!


Ingredients

  • 24 Ritz crackers
  • 12 large marshmallows (cut in half)
  • 12 pieces of milk chocolate (about the size of the Ritz cracker)
  • 1/2 cup graham cracker crumbs
  • 1/2 cup melted chocolate (for dipping)

Instructions

  1. Assemble the s’mores: Place 12 Ritz crackers on a baking sheet. Add a piece of chocolate on top of each Ritz cracker.
  2. Add marshmallows: Place a marshmallow half on top of the chocolate.
  3. Toast the marshmallows: Broil the crackers with marshmallows in the oven for 1-2 minutes or until the marshmallows are slightly browned and puffed. Keep a close eye to avoid burning.
  4. Top and press: Immediately after removing from the oven, place the remaining 12 Ritz crackers on top of the toasted marshmallows and press down gently to form a sandwich.
  5. Coat with graham crumbs: Melt the chocolate in the microwave or over a double boiler. Dip one side of each cookie sandwich into the melted chocolate and then into the graham cracker crumbs.
  6. Let set: Place the cookies on a parchment-lined baking sheet and let them cool until the chocolate hardens.
  7. Enjoy! Serve once the chocolate has set, or store them in an airtight container.

Notes

  • For an extra twist, try using dark chocolate or white chocolate for dipping.
  • You can also add peanut butter between the chocolate and marshmallow layers for a fun variation.
