Ingredients

Units Scale
  • For the Roasted Garlic:
    • 1 whole head of garlic
    • 1 tbsp olive oil
  • For the White Sauce:
    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 1 cup whole milk
    • 1/2 cup grated Parmesan cheese
    • 1/4 tsp salt
    • 1/4 tsp black pepper
    • 1/4 tsp crushed red pepper flakes (optional)
  • For the Pizza:
    • 1 ball of pizza dough (store-bought or homemade)
    • 1 cup cooked chicken breast, shredded or diced
    • 1 1/2 cups shredded mozzarella cheese
    • 1/4 cup red onion, thinly sliced
    • 1/4 cup fresh spinach (optional)
    • 1 tbsp olive oil (for brushing the crust)
    • Fresh basil or parsley, for garnish

Instructions

  1. Roast the Garlic:
    • Preheat the oven to 400°F (200°C).
    • Slice the top off the garlic head to expose the cloves. Drizzle with olive oil and wrap in foil.
    • Roast for 30-35 minutes until the cloves are soft and golden. Let it cool, then squeeze out the roasted cloves.
  2. Prepare the White Sauce:
    • In a small saucepan, melt the butter over medium heat. Add the flour and whisk for 1 minute to form a roux.
    • Gradually whisk in the milk until smooth and thickened.
    • Stir in the roasted garlic, Parmesan cheese, salt, pepper, and red pepper flakes (if using). Remove from heat.
  3. Assemble the Pizza:
    • Increase the oven temperature to 475°F (245°C). Place a pizza stone or baking sheet inside to preheat.
    • Roll out the pizza dough on a floured surface to your desired thickness.
    • Spread the white sauce evenly over the dough, leaving a small border around the edges.
    • Top with shredded chicken, mozzarella cheese, red onions, and spinach (if using).
    • Brush the crust with olive oil for a golden finish.
  4. Bake:
    • Carefully transfer the pizza to the preheated stone or baking sheet.
    • Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned.
  5. Serve:
    • Let the pizza cool slightly, then garnish with fresh basil or parsley. Slice and enjoy!

Notes

  • You can use rotisserie chicken for convenience.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
  • For a crispier crust, pre-bake the dough for 3-4 minutes before adding the toppings.
