For the Potatoes

  • 2 pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt

For the Feta and Garlic

  • 7 ounces (200g) feta cheese block
  • 6 cloves garlic, peeled
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano

  • Fresh parsley, chopped
  • Lemon zest

Instructions

  1. Preheat the Oven โ€“ Set your oven to 400ยฐF (200ยฐC). This ensures it’s hot enough for the potatoes to roast up crispy while the feta gently bakes.
  2. Prepare the Potatoes โ€“ In a large bowl, toss the baby potatoes with 2 tablespoons olive oil, salt, and black pepper until evenly coated. Spread the potatoes on a large baking sheet lined with parchment paper or lightly greased.
  3. Bake the Potatoes โ€“ Roast the potatoes in the preheated oven for 20 minutes, tossing halfway through to promote even browning.
  4. Add the Feta and Garlic โ€“ After 20 minutes, carefully push the potatoes to the sides of the baking sheet, making space in the center. Place the block of feta cheese and the peeled garlic cloves in the center. Drizzle 1 tablespoon olive oil and sprinkle dried oregano over the feta and garlic.
  5. Continue Roasting โ€“ Return the baking sheet to the oven and roast for another 15โ€“20 minutes, until the potatoes are golden and crispy, the feta is soft and slightly browned, and the garlic is tender.
  6. Assemble and Serve โ€“ Remove from the oven. Use a fork to gently crush the roasted garlic into the melted feta and stir slightly for a creamy mixture. Toss everything together with the potatoes or serve the feta and garlic over the potatoes. Garnish with fresh parsley and lemon zest, if desired.

Notes

  • For extra crispy potatoes, make sure not to overcrowd the baking sheet.
  • You can substitute regular potatoes with sweet potatoes for a different flavor.
  • If you like a little heat, add a pinch of red pepper flakes to the feta before baking.
