Description

Russian Salad Olivye is a classic, creamy potato salad traditionally made with boiled vegetables, eggs, and either chicken or ham, all bound together with mayonnaise—perfect as a side dish or appetizer.


Ingredients

  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and diced
  • 1 cup cooked chicken breast or ham, diced
  • 4 hard-boiled eggs, chopped
  • 1 cup frozen peas, thawed
  • 4 small pickles, diced
  • 1/2 cup mayonnaise
  • 1 teaspoon mustard (optional)
  • Salt and black pepper to taste

Instructions

  1. Boil the diced potatoes and carrots in salted water until tender but not mushy, about 10–12 minutes. Drain and let cool.
  2. In a large bowl, combine the cooked potatoes, carrots, diced chicken or ham, chopped eggs, peas, and pickles.
  3. Add the mayonnaise and mustard (if using), then mix gently until everything is well coated.
  4. Season with salt and black pepper to taste.
  5. Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
  6. Serve cold, garnished with additional chopped eggs or herbs if desired.

Notes

  • For a vegetarian version, omit the meat and add more boiled vegetables or beans.
