Russian Salad Olivye is a classic, creamy potato salad traditionally made with boiled vegetables, eggs, and either chicken or ham, all bound together with mayonnaise—perfect as a side dish or appetizer.

- 3 medium potatoes, peeled and diced
- 2 medium carrots, peeled and diced
- 1 cup cooked chicken breast or ham, diced
- 4 hard-boiled eggs, chopped
- 1 cup frozen peas, thawed
- 4 small pickles, diced
- 1/2 cup mayonnaise
- 1 teaspoon mustard (optional)
- Salt and black pepper to taste
Instructions
- Boil the diced potatoes and carrots in salted water until tender but not mushy, about 10–12 minutes. Drain and let cool.
- In a large bowl, combine the cooked potatoes, carrots, diced chicken or ham, chopped eggs, peas, and pickles.
- Add the mayonnaise and mustard (if using), then mix gently until everything is well coated.
- Season with salt and black pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
- Serve cold, garnished with additional chopped eggs or herbs if desired.
Notes
- For a vegetarian version, omit the meat and add more boiled vegetables or beans.
- Use dill pickles for an authentic tangy flavor.
- Best served cold after chilling.
